The Cauliflower Taco That's Doing More for Your Hormones Than You'd Think

Yes, this one is higher in carbs, but those 16 grams of fiber are the real MVP here. Fiber slows the digestion and absorption of carbohydrates, which means a steadier release of glucose into your bloodstream rather than the kind of spike-and-crash that throws your nervous system into a stress response. Cauliflower is also a cruciferous vegetable, meaning it supports estrogen metabolism, a massive win for hormonal balance through every phase of the cycle.

INGREDIENTS:

  • 1 large head cauliflower, cut into florets

  • 3 tbsp taco seasoning or more to taste

  • 2 tbsp nutritional yeast

  • 2 tbsp avocado oil

  • 6 small tortillas

  • Juice of 1 medium lime

  • ½ cup shredded red cabbage

  • ¼ cup pico de gallo

  • 1 medium avocado, sliced

DIRECTIONS:

  1. Preheat air fryer to 400 degrees Fahrenheit.

  2. Toss cauliflower florets with avocado oil, taco seasoning, and nutritional yeast. Spread in a single layer in the air fryer.

  3. Fry cauliflower for approximately 7 minutes or until desired consistency.

  4. Warm tortillas in the oven (or microwave in a pinch) and fill with cauliflower, sliced avocado, red cabbage, pico de gallo, and lime juice.

TIP: Not a fan of raw cabbage? Give it a quick pickle. Toss shredded cabbage into a mason jar and mix in ½ cup each of apple cider or red wine vinegar and water. Add just under a tablespoon of sugar, a teaspoon of salt, a hint of black pepper, and a clove of minced garlic. Give it a good stir, pop it in the fridge for at least two hours, and enjoy. Keeps for up to 3 weeks. You can also skip the cabbage entirely if you're short on time.

  • Paired with a protein shake on the side, which I’d especially recommend if you're in perimenopause (protein needs increase during this transition and most of us aren't hitting them), actively strength training, postpartum, or just going through a season that's asking a lot of you physically and mentally.

  • Loaded up with extra avocado and a big scoop of pico de gallo for more volume without adding much to the prep.

  • Substituting cabbage for a generous handful of cilantro.
