INGREDIENTS:

  • 1.5 cup chickpeas, canned and drained (approximately one 15 oz can)

  • 0.5 cup almond butter

  • 3 tbsp honey

  • 2 tsp vanilla extract

  • 1 tsp baking powder

  • 0.5 tsp kosher salt

  • 3-4 scoops of protein powder (60-80g; I use FourSigmatic’s unflavored protein powder)

  • 0.5 cup mini dark chocolate chips

  • 2 medium eggs

  • 3 cups raspberries

DIRECTIONS:

  1. Preheat oven to 350°F (176°C).

  2. Add the chickpeas, almond butter, honey, vanilla extract, baking powder, salt, protein powder, and cracked eggs to a food processor. Blend until a smooth, creamy dough forms.

  3. Transfer the dough to a bowl and fold in the chocolate chips until evenly distributed.

  4. Form the dough into twelve balls and bake on a parchment-lined, non-stick or oven-safe cookie sheet for 15–20 minutes, or until the edges begin to brown.

  5. Once cooled, store in an airtight container. Each serving includes 2 cookies and ½ cup of raspberries.
